Chili Wontons

Ingredients:

  • 1 pound minced pork or other meat

  • 1 beaten egg

  • 2 TSP Chinese cooking wine

  • 1 TSP sesame oil

  • 1/8 cup chicken stock

  • 50 Wonton wrappers

  • 1 TSBP sweet soy sauce

  • 2 TSP chili oil

  • Cilantro and/or scallions (to garnish)

Instructions:

  • To make the meat mixture, mix in 400g minced pork, 1 beaten egg, 2 TSP Chinese cooking wine, 1 TSP sesame oil and 1/8 cup chicken stock.

  • To make the wontons, place a wonton wrapper flat in your hand, add in a small spoonful of meat mixture, rub water on the edge of the wonton wrapper and seal up the wonton by joining the opposite tips together so that it forms a pyramid shape, making sure all the edges are sealed.

  • Bring a pot of water to a boil and reduce to a simmer.

  • Add in the wontons one by one.

  • When the water boils again, turn off the heat.

  • Use a slotted spoon to remove each wonton from the pot, leaving as much water as you can behind.

  • To make the wonton sauce, mix 2 TBSP sweet soy sauce and 2 TSP chili oil.

  • Drizzle sauce over the wontons.

  • To garnish, add scallions and/or coriander on top.

  • Freeze any leftover uncooked wontons.
